This is how to do 3-ball All Chops:

Every catch is high, with the hand over the ball to Claw from the side; every toss is an under-arm Column toss.
The "chop" is only the high catch sweeping across and down.
The under-arm toss is a choice of style, and is convenient; but is not necessary for doing Chops.

Learn to do the high catch from the side with one ball, then try it with two, then one with three, etc.
For a tutorial, see 2 Ball Chops.

What you want to develop is a swatting or snatching catch, and carrying down:

The more still you can keep your elbow position, rotating the forearm in a flat sweep, the better.
The under-arm toss is more of a follow-through than a distinct move
...what is important is to put the ball where the hand can get it high.

This trick is mostly for clubs, which really do whack across and down (and can whack you).
With clubs, the under-arm toss is necessary to make room for the next club.
